Why The Mongolian Company?

People ask me where they can try Mongolian food, and I never have a place to send them. I grew up in Mongolia, I’ve lived in six countries since, and I’ve never come across anything Mongolian in a grocery store.

The Mongolian Company is my answer to that: everyday things that carry a bit of Mongolia, made carefully. We’re starting with the food I missed most.

Borts is air-dried beef. It’s a staple in Mongolian kitchens, and we’ve been cooking with it for generations. When I moved to the US, the closest thing I could find was jerky, and it wasn’t close at all: too sweet, too chewy, and too many things on the label I didn’t recognize. So I’m taking inspiration from borts to make something I couldn’t find here: Beef Chips. Thin, crispy beef with a bit of salt that you can eat anywhere.
